QUALIFICATIONS AND JOB DESCRIPTION
Duties and Responsibilities
To ensure the profitability, efficiency and creativity in each Food and Beverage venue including banqueting, outside catering events and in-room dining.
To partner with Sales & Marketing to increase exposure and coverage of the Food & Beverage venues in various local and international media.
To analyze and control food and beverage cost in order to achieve financial targets.
To approve menus, prices and promotional events for all Food & Beverage venues in order to maximize revenue generating opportunities.
To identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest comments and guest incident reports, and formulate action plans.
To encourage proactive, efficient and effective inter-departmental communication and working practices in order to promote a climate of teamwork, enthusiasm and productivity.
To conduct and assist colleagues counseling and disciplinary procedures in accordance with Mandarin Oriental, Istanbul procedures.
To develop and implement and maintain the Standard Operating Procedures for the Division.
Be part of the Executive Committee team and provides advice and support in decisions and projects relating to the entire hotel. To manage budget of the entire Food & Beverage Division, monitor and control the expenses and ensure that there is no substantial overrun of costs
To accurately forecast financial performance.
To provide support to Human Resources including recruiting, training and developing colleagues
Previous experience in a similar capacity in the five-star luxury environment; previous hotel opening experience would be an advantage;
Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding.
Must be highly numerate and able to work comprehensively with spreadsheets and budgeting packages.
Experience in developing strategic business and/or Food and Beverage plans and bench-marking activities
Experience in Food and Beverage budget preparation, profit and loss statement analysis and forecasting
Creative and energetic, finding new ways in which to drive F&B revenues
Strategic ability and strong leadership skills; motivate and inspire the F&B Management Team to continue deliver formidable luxury service;
Excellent communication skills both in Turkish & English;
