QUALIFICATIONS AND JOB DESCRIPTION

The Peninsula Istanbul will offer spectacular views of the Bosphorus Strait, the meeting point of East and West. Located in the historic Karaköy district, the hotel will feature 177 opulent guestrooms and a glamourous rooftop, forming part of the Salıpazarı Port re-development, which also features a cruise terminal, public squares, restaurants, and museums. A great opportunity to work in an exciting Gallada Restaurant, The Peninsula Istanbul is looking for its Butcher Chef de Partie to ensure the highest standards of customer service together with Peninsula Service Principles.

 Key accountabilities 
  • Receive deliveries of meat and inspect them to ensure that they adhere to the highest quality standards and are not expired.
  • Use skewers, bone knives, twine and other tools, variously knife skills.
  • Portioning fish and meat, Cutting, grinding and preparing meats for restaurant
  • Prepare meat into forms ready for cooking using a variety of actions, including boning, tying, grinding, cutting and trimming
  • To follow outlet specific service standards.
  • Monitor and ensure smooth operations of the sections appointed (restaurant / banquet / beverage – as applicable) 
  • Controlling the cleanliness and tidiness of stations before, during and after operation.
  General requirements 
  • General knowledge of food technique.
  • Familiar with kitchen equipment.
  • Good hands-on approach.
  • Minimum 3 years’ experience in a Food & Beverage outlet with similar standards and expectations (Hotel based or Standalone).
  • Service etiquette and 5-star service standard.
  • Degree or Diploma in hotel management. 
  • High level understanding of culinary knowledge.
