QUALIFICATIONS AND JOB DESCRIPTION

Set along the dazzling Bosphorus waterfront in the historic district of Karaköy, The Peninsula Istanbul provides a showcase for both vibrant Turkish culture and superlative hospitality within Galataport, a new waterfront revitalisation project. The hotel is comprised of four exquisite buildings – three of them historic and beautifully restored – and welcomes guests arriving by land or sea.

 Key accountabilities 
  • To work closely with the team and Head Chef on day-to-day operation. Ensuring production in the restaurant at high standards, Managing the entire daily operations perfectly 
  • To practice innovation and creativity by constantly introducing new using techniques of wok. Set up section to work useful. 
  • To be responsible for the total quality of food prepared.
  • To match volume of food prepared in accordance with business thereby prevents food wastage and keeps food cost within budget.
  • To achieve a high standard of food quality which meets the expectations of the guests
  • To ensure that all kitchen equipment is kept in good working conditions and that they are serviced in accordance with suppliers’ recommendations thereby protecting their long-term investment value.
  • To ensure that the kitchens are in a neat and clean condition thereby posing no safety threat to kitchen staff.
 General requirements 
  • Minimum 2 years of experience in the same position and total 4 to 5 years of experience in a la carte restaurant kitchens, luxury hotel at high standards, Michelin or 50 Best restaurants plus.
  • Excellent knowledge of the wok cooking.
  • Aiming to work steady in the long term.
  • Closely following up the world and new gastronomy trends.
  • Excellent command of the Asian and European Culinary skills traditional and modern.
  • Excellent knowledge of systems, ordering and inventory.

  • General knowledge of food technique.
  • Familiar with kitchen equipment.
  • Good hands-on approach.
  • Minimum 3 years’ experience in a Food & Beverage outlet with similar standards and expectations (Hotel based or Standalone).
  • Service etiquette and 5-star service standard.
  • Degree or Diploma in hotel management. 
  • High level understanding of culinary knowledge.
